Eating in the summer does not have to be laborious. Since we eat seasonally around here, tomatoes are on our menu. We have been experiencing the first of our tomatoes and we are once again hooked.
Since this Summer has been so unusually hot, I have been making dinner more el fresco style. With that in mind, a caprese salad is perfect for a hot Summer dinner with side of bread, and a good white wine to wash it all down.
INGREDIENTS:
5 Large tomatoes diced
1 small red onion cut into slices
1/2 lb of good mozzarella
1/2 cup of calmata olives
a few sprigs of parsley roughly chopped
a few sprigs of basil
6 or more oz of good olive oil
salt and pepper to taste
4 oz of hard salami
DIRECTIONS:
Combine all the ingredients and serve. Yes, its that simple.
