Snowball Cookies

Its that glorious time of year when its cold outside, and you need to start baking for all those wonderful friends and family. Snowball cookies are a family favorite around here. They are super easy to make, and will certainly keep you coming back for more.


This recipe call for a few simple ingredients. Its a perfect recipe for the begginer baker.







INGREDIENTS

1 cup unsalted butter softened to room temperature. or one cup of ghee for our non dairy friends.

¾ cup confectioners’ sugar

2 tsp pure vanilla extract

2 and ¼ cups of all-purpose flour

1/8 tsp salt

¾ cup of VERY finely chopped pecans






DIRECTIONS

Step 1 Creaming the Butter: In a large bowl using a handheld mixer or stand mixer fitted with a paddle attachment, beat the butter for 1 minute on medium speed until completely smooth and creamy.

Step 2: Add confectioners’ sugar until combined and creamy.

Step 3: Add vanilla extract.

Step 4: Add flour and salt. If you are using a handheld or stand mixer switch your speed to low.

Step 5: Add chopped pecans.

 

Once the dough has come together, roll it in a ball, cover it, and place into the refrigerator for 30 minutes.

            Note: you can leave this dough in the refrigerator for 3 days and it should be just fine.
